Which size should I pick?
Apple only requires the 6.9″ iPhone (if your app runs on iPhone) and the 13″ iPad (if it runs on iPad) — it scales those down for older devices automatically. If your app is iPhone-only, you don't need iPad screenshots at all — see supported devices & the iPad-screenshots trap.
